Dietary sodium continues to generate much talk but little action.
The CDC issued a recent Vital Signs report on dietary sodium with this graphic:
In translation from the data tables:
- 90% of Americans consume too much salt.
- 44% of salt comes from 10 foods: breads and rolls, cold cuts and cured meats, pizza, poultry, soups, sandwiches, cheese, pasta dishes, meat dishes, and snacks.
- 65% of salt comes from retail processed foods.
- 25% comes from food served at restaurants.
- 10% comes from salt added at the table.
- 10% occurs naturally in foods.
- $20 billion a year is the cost of salt-related chronic disease.
The bottom line? Americans would be better off eating less salt.

Marion Nestle is Paulette Goddard Professor in the Department of Nutrition, Food Studies, and Public Health at New York University, which she chaired from 1988-2003. Her degrees include a Ph.D. in molecular biology and an M.P.H. in public health nutrition, both from the University of California, Berkeley. She is the author of three prize-winning books: Food Politics: How the Food Industry Influences Nutrition and Health (2002, revised edition, 2007), Safe Food: The Politics of Food Safety (2003, revised edition, 2010), and What to Eat (2006). When I was growing up, my mother decided to cook without adding salt as it was healthier. At first, for a few days, we missed it. Since then, I always cook without adding salt. I cringe when I see the chefs on TV adding salt to everything. Of course, for some baked items I use some but never as much as written in the recipe. For things like mashed potatoes, I do use some salt but very little. In fact, sometimes–maybe once every few years, I just have to go out and get a bag of salty chips. I can eat them without any guilt. There are so many other flavorings such as vinegars and herbs, spices, wine marinades, sauces that are better than salt! Low blood pressure is the result of no salt cooking!
My mother, at 86, is generally healthy… the only issue she has is high blood pressure. So, one fine evening when I visited her, she cooked for us, already used some processed ingredients, and then went on, adding a liberal dose of sal in the pure… and right after that, she took her anti-high-blood-pressure pills… the absolute model consumer for the food-look-alik-substances and pharma industries!
